Mosmans is a happy and relaxed working environment and this is what the team hopes to convey to guests. The staff prides itself on friendly, efficient service and every member of the team is proud of where they work.
Who are you and where do you come from?
I grew up in the Northern Region of the Philippines, but spent most of my adult life in country's CBD.
When did you start working in a kitchen?
I started working in a kitchen when I was 17. I was a commis for a restaurant in a big casino in the Philippines. Here I honed my love of food as I studied for a Business Management degree.
Where does your inspiration come from?
My main inspiration comes from my family. The colourful food culture I grew up with in Baguio using wonderful fresh and seasonal produce still remains with me. Memories such as a Sunday potluck with family or Christmas lunches where everyone gets together to create and enjoy a feast.
How would you describe your style of cooking?
I would call my style eclectic. Having had the privilege to be exposed so many different kitchens, different cultures and different chefs the closest description I have is Modern Australian with a Filipino, Italian twist, a combination of rustic flavours with a modern touch. I use the concepts of modern cooking and then mix it with traditional Asian influences.
What is your favourite thing to cook?
A humble home cooked dish called Sinigang. It reminds me of being young and sharing it with family and now I love to cook it for my family.
What is your advice to people who want to become a chef?
Every kitchen is different, every chef unique. Be a sponge, learn from other chefs, absorb the good qualities you want to learn and practice. You will have to work long hours and be strong to succeed. You will have cuts and burns but at the end it will all be worth it. Never stop learning and exploring.
Owen joined Mosmans in 2013 to help drive the front of house team. From England, Owen found his passion for the industry aged 13 when he worked weekends at a local boutique hotel. He moved to central London to study Hospitality Management and worked at some of the West End's most elite venues including Rules in Covent Garden and the prestigious Scott's Restaurant in Mayfair. Owen loves Perth's laid back lifestyle and can often be found fishing the local waters or attempting to surf!
Michael has been with Mosmans since opening in 2009 however he commenced at the premises in 1999. When Michael was asked to join Mosmans full time the opportunity was too good to refuse. He has seen and met many wonderful people and even now customers of the old restaurant still remember him. Michael is passionate about his job and loves to come to work every day, even when he was asked to jump out of a plane at 14,000 feet doing a sky dive, all in the name of Mosmans.
